给大家上道经典冷盘——肉皮冻儿。这道菜看起来步骤多，做起来其实很简单，只需耐心和细致。        在北方，无论是肉冻儿、鱼冻儿还是海草冻儿，过年的时候，家家户户都要做上一盆。做好了，盛在大盆里，放在室外，外面天寒地冻，天然的冰箱，吃的时候，切一盘上桌，三两分钟。盘中物，颤颤巍巍，晶莹剔透，配点蘸料，佐餐下酒，入口即化，凉丝丝，清爽爽，美恣了！
        做一次，吃一个年，你说费时还是省事？我做的这小半锅，盛装了四个保鲜盒，冰箱里两个，北窗台上两个，中午回来，一个热炒，一个汤，加上一个冷盘，齐活了。

肉皮冻儿的做法

猪皮刮去里层的油脂和外层的杂质

加水煮开三两分钟，捞出晾凉

再次刮净猪皮内层的油脂和外层的杂质

用热水冲洗干净

把2、3、4步再重复一次（新鲜干净的猪皮可以省略这步）

把处理好的猪皮切成均匀的细条

干红辣椒、八角、桂皮、花椒、茴香用纱布包好

锅内添加水、葱段、姜片和调料包，大火煮开，添加酱油、糖和盐调味

加入肉皮大火煮开，加点料酒敞锅煮几分钟，然后转小火煮至汤汁粘稠，肉皮可以用筷子一穿就透，关火

倒入密闭的容器中，晾凉后移至低温处保存

吃时切成任意形状，根据个人喜好，调味汁儿蘸食
