我虽然不知道 你的蛋糕为什么塌陷 但是无非是几种 可能1，你的配方比例有问题   配方问题 建议买国外书籍 里面的配方  原因很简单 他们的配方保真度比较高
2，你在搅拌面粉的时候 没有搅拌好 要均速搅拌   不要有颗粒 要充分 把面粉搅拌入糊
3，你烘烤温度 有问题 没有烤熟就拿出来了  或温度太低 导致内胚子 无法均匀受温度影响 成型
