煎封鲈鱼外脆内滑，汁浓美味，去掉鱼腥味，是我的至爱！
原料：杀好鲈鱼（亚洲海鲜超市通常帮你将活鱼杀好）一条，生粉，盐，豆豉，蚝油，蒜头，姜米，生抽，糖，葱花，色拉油适量。

1)鲈鱼用干毛巾吸干水份，抹上干生粉，备用。

2）将锅烧至冒烟，加油搪锅，倒回油盆，留少量的油，加入上了生粉的鲈鱼慢火将两面煎至金色，至熟，捞起。

3）再烧锅下油，将豆豉，蒜头，姜米爆香，加入清水，蚝油，糖，生抽，麻油，胡椒，盐调好味，加入生粉勾芡，淋在
煎好鲈鱼上，撒上葱花即成。

友情提示：杀好的鲈鱼一定要吸干水份，再抹上生粉，煎的时候鱼皮不会容易难！同时，要将锅烧至起清烟，再加入色拉油搪一下，俗称：猛锅阴油，煎鱼的皮就不容易破！大家还需各自的口味加些辣椒，更开胃呢。
